Authentic Neopolitan Pizza Menu

Pizza Principles operates the largest available transportable Italian wood fired oven and can cater for the largest celebration events speedily and efficiently. We can fire up to 10 large pizzas at a time in under 70 seconds and with a team of three Pizzaiolos can deliver over 200 hand stretched (never rolled) and topped Neapolitan pizzas per hour.

From our Pizza menu and with our oven operating at over 550 Celsius, we can also fire-tickle a range of entrées to supplement the ‘main event’ using our Tuscan Grill griddle. Additionally we create the freshest seasonal salads and house dressings. We also offer a range of Italian inspired desserts to round off our wood fired pizza menu.

Wood fired tuscan grill ‘tail-on’ jumbo shrimp, skewered
Marinated in virgin olive oil (VOO), white wine, thinly sliced garlic, sea salt, fresh lemon juice and bruised lemon wedges for two hours prior to firing on the tuscan grill. At private functions these will be skewered on fresh rosemary branches for firing.

Wood fired tuscan grill Italian chicken skewers
Marinated in VOO, balsamic, dijon mustard, basil, oregano, garlic and ground white pepper. Kebab-ed on individual metal skewers. With pitted black olives as an option.

Stuffed portobello mushrooms
Stuffed with chopped mushroom, minced garlic, capers, grated parmesan, fresh chopped parsley, olive oil, white wine vinegar, balsamic and ground salt and pepper.

Classic margherita
Crushed San Marzano tomato sauce, Italian mozzarella, sea salt and fresh torn basil, drizzled with VOO.

Naples Salami 
As above without the salt and basil but with shaved parmesan.

Marinara
San Marzano sauce, sea salt, chopped garlic, oregano, VOO.

Nduja
Our own recipe italian sausage coarsely ground from three cuts, seasoned, pre sautéed.

Bianca Fresca (White)
Goats cheese, garlic infused VOO, prosciutto, mozzarella – fired and finished with lemon oil drizzled organic rocket and shaved parmesan.

Proper ham and mushroom
Proper ham, shredded from a roasted joint supplied by JJJ Heathcote of Bollington, sliced button mushrooms, oil drizzled and fired.

Goats cheese & caramelised onion
San Marzano sauce, sea salt, mozzarella, crumbled goats cheese and caramelised onion marmalade, drizzled with VOO.

Truffled taleggio & mushroom 
(White) A drizzle of white truffle oil adds a touch of decadence to this crisp bubbly masterpiece. Distinctive taleggio, sliced mushrooms and finished with truffled oil.

Bresaola and rocket
A classic Italian cured beef pizza with rocket added post firing to a san marzano and fior di latte mozzarella base and finished with grated parmigiano, crushed black pepper and a drizzle of lemon oil.

Mortadella and fior di latte
(White) Cured pork from Bologna atop Italian mozzarella, brushed with chopped sweet garlic and finished post firing with VOO and sprinkled with fresh thyme and dried chilli flakes.

Ultimo Pizza
Extremely decadent and a favourite on Oscar’s night parties and created by Wolfgang Puck of Spago. A little extravagant to serve by the ‘pie’ and better appreciated as an exceptional canapé served by ‘walk around’ Pizziaolos from olive wood platters to your chosen guests. Comprising finest slices of Scottish smoked salmon, our own freshly prepared dill cream dressing, finely sliced sweet red onion, garlic and lemon oil VOO drizzle, caviar and chopped fresh chives.

Baby leaf salad pre-dressed with house Italian dressing.

Rocket, romaine lettuce, spring baby leaf salad, sliced medjool dates, cherry tomatoes, thin sliced red onion and shaved parmesan.

Classic Caprese (seasonal) – Fresh sliced Italian ‘fior di latte’, in-season imported sliced Italian vine tomatoes (to order), basil, sea salt, ground black pepper and Tuscan EVOO served on olive boards

Freshly made, kiln bottled and labeled for 50 servings.

Entrées

Baked Feta Cheese with Olives – Feta cheese topped with a savoury mix of olives, orange zest and spices softens into spreadable goodness when baked in a wood fired oven. Spread onto fresh slices of sourdough bread, this is a scrumptious treat.

Sweet Peppers Stuffed with Cheese and Capers this is a delicious starter, simple but a real pleaser with mozzarella, parmigiana, basil and chopped capers.

Crostini with Cherry Tomatoes – Sweet fire roasted cherry tomatoes with herbs and thinly sliced garlic sit atop lightly browned crisped crostini sourdough that creates a delectable and rustic hors d’oeurve.

Whole Roasted Baby Lamb Chops – Blend of onion, spices, citrus and lamb rib chops offers an aromatic, delicious finger licking dish.

 

Meat

Roasted Italian Sausages with Grapes – Trust us – this is delicious food. Our own special italian sausage encased in natural skins, roasted and nestled on a bed of freshly roasted grapes. If you fancy taking a break from the normal!

Osso Bucco – a Milanese favorite, chopped veal shanks, san marzano tomatoes, leeks, fennel, carrot, red wine, herbs and orange zest. A complete main course meal (extended cooking).

Roasted Boneless Leg of Lamb with Rosemary and Garlic – We think this is the very best roasted lamb dish, simple, unfussy and slowly roasted in our wood fired oven for over 2.5hrs (extended cooking).

Roasted Pig Tuscan Porchetta Style – Tuscan speciality, deboned whole roast pig made with porchetta having hints of garlic, rosemary and fennel. This a delicious, delicate yet hearty italian favorite (extended cooking time).

Tuscan Grill Skewers of mixed Meat (Spiedini) with Pancetta and Sage – Cooked over our Tuscan Grill within our wood oven these are delicious skewers of tender pork fillet, chicken and Italian Sausage….a mixed grill on a stick if you like!

 

Poultry 

Mediterranean Braised Chicken with Lemon and Fennel – a true taste of the mediterranean with chicken, green olives, fennel, lemon garlic and a range of additional spices and seasonings.

Chicken Meatballs with Tomato, Caper and Olive Sauce – delicious chicken meatballs with a mediterranean twist that are sure to please the widest audience with Kalamata olives, cured capers, pancetta and that Italian staple, San Mazarno tomatoes.

 

Fish

Whole Roasted side of Salmon – a simple wood oven roasted side fillet of salmon with lemons and an aromatic salt that brings out the very finest most enticing flavours.

Shrimp in Spicy Tomato and Saffron Sauce – Juicy shrimp are adorned in a wildly flavorful sauce made of San Marzano tomatoes, orange peel, saffron, garlic and more fragrant spices.
